Yum.

These things are good!

I was put in charge of dessert for our Father’s Day get together at my parents’ house today, so naturally I turned to my Pinterest boards to find something new and exciting to bring. Normally I like to make things at least one time before serving to people, but I had a feeling this chocolate chip pecan bars recipe would be a winner. They’re like pecan chocolate chip cookies, but in bar form. How can you lose, right?

Chocolate Chip Pecan Bars

For the base
2 cups plus 4 tablespoons all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 1/2 cups light brown sugar (I used dark)
1 stick butter (8 TBS), softened
2 eggs
2 egg yolks
2 tsp vanilla

For the topping
4 oz. cream cheese, softened
4 TBS light corn syrup
2 tsp vanilla
1 1/2 sticks butter (12 TBS), melted
1 cup light brown sugar (I used dark)
1/2 tsp salt
2 egg yolks
1 cup all-purpose flour
1 cup finely chopped pecans
1 cup chocolate chips

Heat oven to 350 degrees and spray a 9×13-inch pan with non-stick spray. Line the pan with parchment paper, leaving about 1-2 inches hanging over the sides, and spray the paper with non-stick spray.

Base: In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and brown sugar until well blended. Add in the butter, eggs, egg yolks, and vanilla and mix until smooth. Spread batter evenly in pan.

Topping: In the same bowl, mix together the cream cheese, corn syrup, vanilla, butter, brown sugar, salt, egg yolks, and flour until smooth. Fold in the pecans and chocolate chips.

Carefully spread the topping over the base and bake for 45 to 50 minutes, or until the filling is puffed and the edges are set, but the center is just a little wobbly.  Cool completely in the pan. Once cooled, use the parchment paper to remove the bars from the pan and slice.

Oh, and if your kitchen counters don’t look similar to this when you get done baking, then we can’t be friends.

    OMG that’s exactly what my kitchen looks like after baking LOL. Glad I’m not the only one. Those bars look amazing. I happen to have 2 egg yolks sitting around (I needed the whites 2 days ago) so this may be the perfect excuse to make them, LOL.
