I’m just going to cut to the chase tonight.

I made chicken tacos, and they were good.

Not only were they good, they were super easy. So of course I wanted to share them with you!

I know I’ve confessed my love affair with Pinterest before. And thanks to Pinterest, I have a slew of recipes to try. Some are more involved, but this one could not be easier.

I found this chicken taco recipe on Pinterest.

The recipe calls for:

6 boneless, skinless chicken breasts

1 packet taco seasoning

1 (12 ounce) jar of salsa

You dump all of that in a crock pot and cook on high 4-6 hours or low 6-8 hours.

Since there are only three of us, I halved the recipe and used 3 chicken breasts, half a packet of taco seasoning, and half a jar of salsa.

I dumped all of this in our crock pot and gave it a good stir.

I cooked it low and slow for 8-9 hours, and ended up with the most tender, fall-apart chicken.

At this point, you could throw this chicken in a tortilla with some cheese, tomatoes and sour cream and have yourself a nice little taco. I wouldn’t fault you for it. That sort of simplicity is part of the beauty of this recipe. And I promise if you do this, you will have a solid meal.

However, let me share a little Starling family secret with you.

Greg’s grandma makes the best tacos. Maybe other people make their tacos the same way, but I had never had tacos this way until I tried hers. And since then, the only other time I’ve had tacos like this was at the small, authentic Mexican restaurant a few minutes from our house.

I’m tellin’ ya, it’s worth the extra bit of effort.

How To Take Your Tacos To The Next Level

Coat the bottom of a pan with oil. You want a good amount of oil but not too much, or you’ll end up with soggy tortillas. And no one wants that. For this step, any vegetable oil will do. You want to stay away from oils that have a high smoke point, so canola oil is the main common household oil that you want to stay away from. It’ll set off your smoke detectors in a hurry. However, olive oil, vegetable oil, corn oil, peanut oil (what we use) all should be fine.

Heat the pan over medium high heat. Once the oil is hot, add in a tortilla. We’re partial to the corn tortillas for these tacos. I’ve never tried them with flour tortillas, so I can’t say if they’d hold up as well as the sturdy corn tortilla.

You’ll want to work quickly, because the tortilla will start to brown.

As soon as your tortilla is in the oil, place a spoonful of chicken in the middle.

We then use tongs to line the chicken up in a neat little row, which helps keep things clean when closing the tortilla.

Using those same tongs, immediately fold half of the tortilla over.

Let it cook for 1-2 minutes, and then with your tongs, flip it over on the other side to continue cooking for 1-2 additional minutes.

Repeat for all other tacos. We usually have 3 going in the pan at once, so by the time your sous chef has grated the cheese and chopped the tomatoes, you’re good to go.

    That looks SO GOOD! I pretty much always shy away from recipes that involve frying because of the mess potential, but I might have to try this one!
